Fudgy Mocha-Toffee Brownies

Fudgy Mocha-Toffee Brownies(Adapted from CL)

1 tablespoon plus 1 teaspoon instant espresso powder
1/4 cup hot water
1/4 cup butter
1/4 cup semisweet chocolate chips
1 1/2 cups all-purpose flour
1 1/3 cups sugar
1/2 cup dutch process cocoa
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
1/4 cup toffee chips

Preheat oven to 350

In a small bowl, stir together espresso powder and water.

Melt butter and chocolate chips together in the microwave until the butter has melted and you can stir the chocolate smooth.

In a large bowl, sift together flour, sugar, cocoa, baking powder, and salt.

In a medium bowl, whisk together espresso mixture, butter mixture, vanilla, and eggs. Add espresso mixture to flour mixture and stir just until combined. The mixture will be quite thick. Spread evenly into a 9" square baking dish coated with cooking spray. Sprinkle evenly with toffee chips. Bake 18-22 minutes. Cool on a wire rack.
