Chocolate Malted M&M Cookies2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
8 tablespoons shortening (I use spectrum organic)
8 tablespoons butter flavored shortening *You can use all butter, but these cookies have the best texture with shortening.
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla
1/2 cup chocolate malt powder - I use Carnation Chocolate Malt Powder
2 cups M&Ms
Preheat oven to 350 degrees.
In a large bowl, whisk together flour, baking soda and salt.
In a large mixing bowl, cream the shortenings together - add sugars and beat until combined.
Add the eggs, 1 at a time, mixing until combined after each. Mix in vanilla. Add the malt powder and slowly mix until combined. Add the flour gradually and mix just until combined. Stir in M&Ms. Cover and refrigerate dough for at least 1 hour.
Drop dough by tablespoons onto baking sheets lined with parchment. Bake until golden and almost set in the center, about 10 to 12 minutes. Let cookies cool on the baking sheets about 5 minutes before transferring to a rack to completely cool.
Makes about 54 cookies.

I noticed this on another recipe: why do you measure your margerine or shortening in tablespoons? 8 Tablespoons = 1/2 cup, wouldn't that be simpler? Just wondering!

ReplyDeleteJust a couple of questions for ya. Do you find your Organic Spectrum to be gritty? I've used it to grease cake pans, and it seems to be gritty. On the m and m cookies, I have vanilla malt powder. Do you think that would work in place of the choco malt powder?

Christine - I've never found it to be gritty.

can i use half shortening and half butter?

ReplyDeleteI made these last weekend and everyone loved them. I did 1/2 butter and 1/2 shortening and they seemed to come out okay, but next time I might use all shortening just to see if they come out even better.

ReplyDeleteJoe! I made these cookies yesterday because we were having company. Everyone LOVED them - I'll definitely be making these again. I didn't have enough holiday M&M's, so I added some white chocolate chips to the batter. They looked so pretty! I also had to use 3/4 c.white sugar and 3/4 c.brown sugar because I was low on brown sugar. The cookies were wonderful and left my kids begging for more!
