My boyfriend was extremely skeptical, as were a couple of my friends today... Carrots w/ orzo?? You're crazy!! But I had a good feeling about this recipe and boy did it hit the mark. The rosemary perfectly complements the flavors of this dish and the carrot is the perfect texture. I used romano because it's what we had in the house, and as a result hardly had to add any salt at the end. Thank you!
