Butterscotch Blondies

Butterscotch Blondies (Adapted from CL)

10 tablespoon unsalted butter
2 large eggs
2 egg whites
1 cup whole wheat pastry flour
1 cup all-purpose flour
1 1/2 cups packed light brown sugar
1 cup packed dark brown sugar
2 teaspoons baking powder
1/2 teaspoon salt

Preheat oven to 350

In a small skillet, melt butter over medium heat and cook until browned - about 6-8 minutes, stirring often. Place butter into a small bowl and set aside for 15 minutes to cool. Whisk in eggs and egg whites.

In a large bowl, whisk together flours, sugars, baking powder and salt until thoroughly combined.

Add wet ingredients into the dry and stir just until combined. Scoop mixture into a 9 x 13" baking pan lightly coated with nonstick spray - spreading evenly with an offset spatula.

Bake until golden and set - a toothpick placed near the center should come out mostly clean with a few crumbs attached, about 22-30 minutes. Remove and set pan on a wire rack to cook completely before cutting.
