Baked Hush Puppies (Adapted from Kelloggs)
1/2 cup all-purpose flour
1/2 cup yellow cornmeal
1/2 cup crushed rice krispies
1 teaspoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon granulated garlic
1 large egg
1 large egg white
1/2 cup evaporated milk
2 tablespoons canola oil
Preheat oven to 425
In a medium bowl, whisk together flour, cornmeal, rice krispies, sugar, baking powder, salt, cayenne and garlic.
In a small bowl, whisk together egg, egg white, milk and oil until frothy. Pour into the dry ingredients and stir just until combined.
Evenly divide batter between 24 mini muffin cups lightly coated with nonstick spray. Bake until golden and crisp - about 10-14 minutes.
