Grilled Cheese-and-Chicken-Sausage Waffles (Adapted from Rachael Ray)
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon pepper
1 3/4 cups buttermilk
4 tablespoons butter, melted
2 large eggs
5 ounces (about 1 1/4 cups) shredded sharp white cheddar cheese
8 ounces cooked chicken sausage, sliced into 1/4" cubes
Preheat waffle maker and oven to 200 degrees.
In a large bowl, whisk together flour, baking powder, baking soda, salt and pepper.
In a medium bowl, whisk together buttermilk, butter and eggs. Pour into the dry ingredients and stir just until combined. Fold in cheese and sausage.
Cook according to your waffle machine's directions. The amount of batter and cooking time will vary depending on what kind of waffles you make, American or Belgian - we used roughly 1/3 cup or so for each waffle well in our American-style waffle machine. As waffles are done, hold in the warm oven until all are completed.
Serve with additional cheese scattered on top of the warm waffles, if desired.
Makes about 4 to 6 servings.
