Peanut Butter Sandwich Cookies with Milk Chocolate Filling (Adapted from The Craft of Baking)
For the cookie dough
1 3/4 cups unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons unsalted butter, softened
1/2 cup plus 1 tablespoon packed dark brown sugar
3/4 cup confectioners’ sugar
1/2 cup creamy peanut butter
1/2 cup canola oil
1 large egg
1 1/2 teaspoons vanilla
For the chocolate filling
6 ounces chopped quality milk chocolate
1/2 cup creamy peanut butter
1/4 cup confectioners’ sugar
1/4 teaspoon salt
3/4 cup heavy cream
To prepare the cookie dough
Preheat oven to 350 degrees.
In a large bowl, whisk together the flour, baking powder, baking soda and salt.
In a large mixing bowl beat together butter, brown sugar and confectioners' sugar until smooth and creamy. Mix in peanut butter until combined, scraping the sides of the bowl as needed. With the mixer running, gradually pour in the oil, then beat in vanilla and egg. Add dry ingredients and mix just until combined.
Drop scant tablespoon amounts of dough, spacing them about 1" apart, onto parchment-lined baking sheets. Place into the oven and bake until the cookies and golden around the edges, about 10 to 12 minutes. Remove and let cookies cool on the sheets for 2 minutes before transferring them to wire rack to cool completely.
To prepare the chocolate filling
In a medium heat-safe bowl, add chopped chocolate, peanut butter, confectioners' sugar and salt.
In a small saucepan, add cream and bring just to a boil. Remove from the heat and pour hot cream over the chocolate mixture, stirring until the chocolate is melted and mixture is smooth.
Place bowl into the refrigerator and let mixture chill, stirring occasionally, until the filling has cooled and is thick enough to spread. Using an offset spatula, spread about 1 tablespoon of the filling over the flat bottom sides of half of the cookies. Place the remaining cookies on top (matching the flat bottom of the cookie to the filling) to make a sandwich.
Makes about 24 sandwich cookies.

ReplyDeleteThe filling came out to about 2x what was required (maybe because my cookies were big) but the kids loved it anyway - it's like extra smooth peanut butter chocolate pudding.
The filling is based on ganache, so the way to make it smooth is to mix with the cream in tight circles and widen the circle as filling in the middle becomes smooth and uniformly colored .
