Raivas (Cinnamon Butter Cookies) (Adapted from Nick Malgieri)
2 1/4 cups all-purpose flour
1 teaspoon cinnamon
1/4 teaspoon salt
5 tablespoons unsalted butter, softened
1/2 cup granulated sugar
3 large eggs
Preheat oven to 350 degrees.
In a medium bowl, whisk together flour, cinnamon and salt.
In a large mixing bowl, beat together butter and sugar until light and fluffy. Add eggs, one at a time, mixing until combined after each.
Add dry ingredients and stir by hand until just combined. Scoop the dough onto a lightly floured surface; fold the dough over on itself 2 or 3 times, until smooth.
Evenly divide the dough into 24 pieces. While keeping the other pieces of dough covered, roll one piece into a long rope, about 12 to 16" long - join the edges together, forming a circle of dough. Place circle onto a baking sheet lined with parchment paper - push the sides of the circle toward the center, making a very irregular pattern. Repeat process until all the dough has been used - you will most likely need two to three baking sheets.
Place baking sheet into the oven and bake until they are firm to the touch and golden, about 12 to 16 minutes, rotating the pans halfway through. Remove from the oven and gently transfer cookies to a wire rack to cool completely.
Makes 24 cookies.
