Simple Chicken and Oat Groat Soup (Adapted from CL)
2 1/2 cups water
1 cup dry oat groats
1 tablespoon olive oil
1 1/2 cups chopped onion
1 cup chopped celery
3/4 cup chopped carrot
1 cup diced zucchini
2 garlic cloves, minced
4 cups chicken broth
2 cups chopped cooked chicken breast
1 cup chopped green beans - about 1" pieces
2 teaspoons chopped fresh thyme
1/2 teaspoon salt
14.5 can fire roasted diced tomatoes
1 cup frozen green peas, thawed
1/3 cup chopped fresh basil
In a large saucepan, mix together water and oat groats. Bring to a boil, reduce heat and let simmer 45 minutes or until just tender. Drain and wipe pan clean.
Over medium-high, heat oil in the same pan you cooked the groats in. Add onion, celery, and carrots - cook until tender, about 8 minutes. Stir in zucchini and garlic - continue cooking for about 2 minutes. Mix in cooked oat groats, broth, chopped chicken, green beans, thyme, salt and tomatoes. Bring to a boil, reduce heat and simmer 10 minutes. Stir in peas and basil right before serving.
