Asian Chicken Noodle Soup(Adapted from CL)
1 tablespoon canola oil
3 garlic cloves, minced
1 tablespoon grated fresh ginger
2 stalks fresh lemongrass, peeled
2 cups water
28 ounces chicken broth
16 ounces boneless, skinless chicken breast, cut into bite-sized pieces
4 ounces dry whole wheat angel hair pasta
1/4 cup chopped fresh cilantro
1 tablespoon fresh lime juice
1/2 teaspoon salt
2 green onions, thinly sliced
1 red chile pepper, finely chopped
Add oil in a large skillet and heat over medium heat. Add garlic, ginger, and lemongrass - sauté 3 minutes. Add water and broth. Bring to a boil and add chicken and pasta. Cook 5 minutes or until chicken is done. Remove from heat and stir in remaining ingredients. Let stand 5 minutes. Remove lemongrass and serve.
