Chickpea Burgers with Tahini Sauce

Chickpea Burgers with Tahini Sauce (Adapted from Eating Well)

For the burgers
1 19-ounce can chickpeas, drained and rinsed
4 green onions, cleaned and sliced
1 egg
2 tablespoons all-purpose flour
1 tablespoon chopped fresh oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 tablespoons extra-virgin olive oil
2 whole-wheat pitas, halved

For the sauce
1/2 cup plain yogurt
2 tablespoons tahini
1 tablespoon fresh lemon juice
1/3 cup chopped leaf parsley
1/4 teaspoon salt

In a food processor, add chickpeas, onions, egg, flour, oregano, cumin and 1/4 teaspoon salt . Pulse the mixture until it is coarse and holds together. Be sure to scrape down the sides once or twice. Portion mixture into 4 even balls and form into patties.

In a large nonstick skillet, add oil and heat over medium-high. Add patties and cook until golden brown, about 5 minutes. Gently flip and cook 2 to 4 minutes more, until crisp.

While the burgers cook, in a medium bowl whisk together yogurt, tahini, lemon juice, parsley and 1/4 teaspoon. Place each burger in a pita and serve with the sauce.

  1. Thanks for the chickpea burger recipe. I have two cans of chickpeas that need to get used, so maybe I'll make one of these for lunch.
