Chipotle-Marinated Pork Tenderloin (Adapted from Eating Well)
1 canned chipotle chile in adobo with 1 teaspoon adobo sauce
1 clove garlic, minced
1/2 cup fresh orange juice
3 tablespoons fresh lime juice
1 tablespoon red-wine vinegar
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
16 ounces trimmed pork tenderloin
Using a blender, puree chipotle and sauce, garlic, orange juice, lime juice, vinegar, oregano, cumin, salt and pepper until mostly smooth. Place marinade in a ziploc bag and add the pork tenderlion. Remove the air and seal - place in the refrigerater for at least 1 hour, but you can leave it there for 6-8 hours.
Preheat grill to high
Remove pork and discard marinade. Place the tenderloin on the grill and cook, turning a couple times, until the temperature reaches about 145 - this should take about 10 to 15 minutes. Remove and let the tenderlion rest for at least 5 minutes before cutting.
How did you guys like this Tenderloin? I have a Tenderloin in the fridge I should use and I wonder if it's any good.
ReplyDeleteDani - we used this in the Fennel salad and pulled pork sandwiches lately - We didn't have it just as is. We did like it, but it could have used a touch more heat - would you like me to give you links to the main posts where we used them?
