Dark Chocolate Banana Macadamia Nut Bread
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
1/2 cup butter, softened
1 tablespoon freshly grated orange peel
2 eggs
1 teaspoon vanilla
1/4 cup orange juice
1 cup mashed very ripe bananas - about 2 medium
1/3 cup dark chocolate chips
1/3 cup chopped macadamia nuts, lightly toasted
Preheat oven to 350
In a medium bowl, whisk together flours, baking soda, and salt.
In a large mixing bowl, beat together sugar, butter and orange zest. Beating at low spead, add in eggs and vanilla. Mix in flour mixture, scraping bowl often, until combined.
Stir in bananas and orange juice and mix until combined. Fold in chocolate and nuts by hand.
Spoon mixture into 3 mini loaf pans. Bake for 30 to 40 minutes or until toothpick inserted in center comes out mostly clean. Cool 10 minutes; remove from pans. Cool completely.
I am curious about this combination of orange juice, banana and whole wheat flour -- does this create a delicate tea bread structure or a moist, chewier texture? So many banana breads are so intent on experimenting with sour cream, buttermilk and other "moistness deliverers" that ultimately obscure the flavor...
