Oreo Truffle Balls
8 ounces cream cheese, softened
16 ounces oreos, broken into quarters
Enough best quality white chocolate chopped to measure about 2 cups
In a large mixing bowl, beat cream cheese for a couple minutes to smooth out. Add in just over 1/2 of the broken oreos and mix until thoroughly combined. Add in the rest of the oreos and mix just until combined - some bigger pieces are ok.
Cover bowl and chill for at least 2-3 hours. Scoop out dough with a heaping teaspoon and roll into 50-60 balls. Cover and place back in the refrigerator to firm up.
Slowly melt the white chocolate in a double boiler, stirring occasionally, until most of the chunks are smooth. Remove and stir to melt the rest of the chocolate. Dip each truffle ball and set aside on a silpat or parchment paper. If the chocolate mixture starts to firm up, place back over the double boiler to slowly remelt, or gently rewarm in the microwave. Store in the refrigerator after all are dipped.

ReplyDeleteI'm having trouble with the coating. When the truffles dry on the wax paper and I lift them off, the chocolate coating "rips off" on the bottom. How can I prevent this?

ReplyDeleteIf you want to have smooth chocolate coating, try putting a little bit of parafin wax in the melted chocolate. Alternately, you can try a bit of butter. I like to dip while these type of things (cookies too) are over a cake cooling rack set on parchment paper in a jelly pan so that I can reuse the chocolate that drips off.
ReplyDeleteIf you want to poke it with a bamboo skewer or toothpick and then dip, the hole is easy to cover, but your smooth coating might not be so smooth. Cover it up by "piping" the chocolate over the dipped piece. Don't know how to pipe icing? Put some melted whatever-you're-using into a zip close sandwich bag and squeeze out all the air. Seal the zip closure. Roll the top down over itself until you get to the bottom, then tip the bag so that the bulk of it is only in one corner. This is how you will pipe after you cut a teeny hole. You can always cut a bigger hole, but it's hard and messy to make it smaller.
Had these today at a Christmas party for work, and loved it. It was actually the first bite I took before my German lunch. I don't like Oreos in the least, but I think the cream cheese cuts the sweet so that I can tolerate it.
Someone brought these to my work Christmas party, they are to die for. My husband is an Oreo nut so these will be a favorite of ours for season's to come. Way too easy. You can make them in stages if you're short on time.

Always use parchment paper when making chocolates. Also invest in a pair of cheap white cotton gloves and a set of candy making tools. The gloves keep finger prints off of your beautiful chocolate and it keeps them from melting from the heat of your hands.

ReplyDeleteI made these at Christmas. I used nonpareils mix sprinkled on top to make them look a bit more festive. I made a batch and substituted mint extract for the vanilla. Then I sprinkled them with green nonpareils so I could tell the difference. They were delicious.

ReplyDeleteI put some of the melted choColate in an ice cube tray, then added the Oreo mixture ball, then spooned chocolate over it filling in the sides and covering the ball. Then put it in freezer for about 20 minutes.
ReplyDeleteYou have to flip the ice cube tray over and give it a few good slams against the counter...but they'll come out...nice, smooth and professional looking.
Then if you want to go the extra mile, you can decorate them.

I just made a batch. I used two types of chocolate chips mixed with Crisco shortening which I melted in the microwave. I put the balls in the freezer for about an hour. The chocolate immediately started to harden on the cold balls. I also added chopped walnuts to some of them. Delicious, but now I have to get rid of them as I will eat them all and get sick.
ReplyDeleteI've bookmarked this recipe for a long time and finally made it yesterday. I just wanted to add that I found chopsticks to be better for handling them while dipping, rather than toothpicks or skewers. But I suppose that'd only be the case for people used to using chopsticks.
