We often make frittatas as it is a great way to use up leftovers that have been sitting in the refrigerator. Dinner tonight, a Florentine Frittata, has a crispy hash brown crust topped with a spinach and egg combo then strips of roasted red bell peppers scattered over the top. Before serving, a sprinkling of cheeses is broiled until slightly crisp and melted. This is a quick meal that could be thrown together in a snap for a great breakfast treat too.
