It seems if I'm not working on getting the chicken used up, I'm busy with lots of frozen wild blueberries in the kitchen! I made these Blueberry Streusel Muffins the other day which Jeff then brought into work (after passing quality control!) to share... his co-workers sure got a feast this week!
The streusel for these muffins is a crumbly combination of brown sugar, flour and sliced almonds with a pinch of fresh grated nutmeg for a hint of something special. It is drizzled with just enough melted butter to moisten it and allow the streusel to crisp as it bakes. For the muffin batter, I used a combination of all-purpose and whole wheat pastry flour to keep them tender and light, but you could use entirely all-purpose flour if you like. With a cup of brown sugar, these golden muffins are fairly sweet, but the butter and buttermilk brought a rich counterpoint to keep the sweetness in check. The muffins also have a slight twang to them coming from the buttermilk with vanilla and fresh lemon zest brightening up the background. The streusel that adorns their well-risen crowns added a textural nutty crunch that played off their moist and tender blueberry-studded insides.
Those look beautiful... blueberry muffins are my favorite kind... sniff sniff... I'm so sad I can't eat any... I started a diet yesterday (I think I've gained 10lbs since I started my stooopid FOOD BLOG!) :-D

ReplyDeleteI love the addition of almonds in the streusel!!! Yes blueberries are an ARF food. Full of antioxidants. Very, very good for you...and almonds are a food you eat to loose weight...so there you go.....eat all the muffins you want!!!!

ReplyDeleteSecondly, seeing all the wonderful foodie blogs has inspired me to start my own. Since I've decided to stick with Blogger, my lack of consistency in posting to my old blog has shown me I don't quite know some things. (I really don't mean to mooch but I have a hard time finding what I need through their help.) How is it that you make the link for the recipes at the end of your posts? I was interested in doing cuts so the whole post wasn't on the front page but I don't think I can do that with Blogger.

Yum! I just love nutmeg with blueberries. It's so funny Joe, I just got finished posting about how I was using up my blueberry supply and NOW I find this great recipe. Guess I'll be picking up a few more pints tomorrow...

Joe, unfortunately, the only blue berries we get here would be frozen or picked very young and then imported :( I would've love to try them with your recipe.
