Balsamic Roasted Asparagus(Adapted from CL)
1 pound asparagus
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon kosher salt
1/2 teaspoon bottled minced garlic
1/4 teaspoon freshly ground black pepper
Preheat oven to 425
Prepare asparagus by snapping off the tough ends. Set asaparagus in a baking dish. Drizzle with olive oil and vinegar. Add salt, garlic, and pepper, tossing well to coat. Bake 10-15 minutes, turning once.
This is my favorite way to cook asparagus, My whole family loves it. It works well with fresh whole carrots but they must be very thin or blanched a few minutes first.

ReplyDeleteThis is my favorite way of cooking asparagus. I just cooked a very similar meal, with salmon and asparagus cooked for 12-15 minutes at 425.
