Brown Soda Bread

Brown Soda Bread (Adapted from CL)

2 cups whole-wheat flour
1 cup all-purpose flour
1/2 cup dry steel-cut oats
2 tablespoons brown sugar
1 tablespoon wheat germ or ground flax seed
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
1 large egg, lightly beaten

Preheat oven to 325 degrees.

In a large mixing bowl, whisk together flours, steel-cut oats, brown sugar, wheat germ, baking powder, baking soda and salt.

In a medium bowl, whisk together buttermilk and egg. Pour into the dry ingredients and stir just until combined. Scoop mixture into a 9" x 5" loaf pan coated with cooking spray.

Place pan into the oven and bake until a wooden skewer placed into the center comes out mostly clean with a few moist crumbs attached, about 55 to 65 minutes.

Remove pan from the oven and carefully invert bread onto a wire rack, turn bread topside up and let cool completely before serving.

Makes about 8 to 12 servings.

  1. Do I really have to use the wheat germ or ground flax seed? I hate to buy things like this and only use a small amount.

  2. Janet - Do you have a store that has bulk flours and whatnot? Then you could buy what you need. Otherwise, do you have to? No, I don't think the bread would be ruined if you left it out.

  3. Thanks Joe, I'll get some at Whole Foods. I forget about that place because it is not a favorite. Have you tried the new chicken at the Fresh Market? You must have one in Charlotte. I did a beer can type chicken with one of their roasters this week and it was great. I'm in Raleigh

  5. We do have that store here, but I haven't bought any meat from them yet. We'll have to fix that!
