12 ounces whole-wheat spaghetti
2 cups broccoli florets
2 cups trimmed snow peas
2 cups trimmed sugar snap peas
1/2 cup natural peanut butter
1/4 cup soy sauce
1/4 cup vegetable broth
2 tablespoons rice vinegar
2 tablespoons fresh lime juice
2 tablespoons brown sugar
2 teaspoons minced fresh ginger
1 scallion, cut into pieces
1/4 teaspoon red pepper flakes
1/2 cup chopped peanuts, toasted

In a large pot of boiling salted water, cook pasta according to the package directions. Drain and rinse with cold water - drain well.

Meanwhile, steam broccoli for 3 minutes - add snow and sugar snap peas, continue to steam for 2 more minutes.

Add peanut butter, soy sauce, water, vinegar, lime juice, brown sugar, ginger, scallion and red pepper flakes in a food processor - process until smooth.

In a large bowl, add the pasta and vegetables - drizzle with the peanut sauce and toss well to combine. Serve each plate with a scattering of the chopped toasted peanuts.

Makes about 6 servings.
