Snickerdoodle Blondies

Snickerdoodle Blondies (Adapted from My Baking Addiction)

For the dough

2 2/3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon salt
1/4 teaspoon fresh grated nutmeg
16 tablespoons (2 sticks or 1 cup) unsalted butter, softened
2 cups packed brown sugar
2 large eggs
1 tablespoon vanilla
3/4 cup cinnamon chips

For the topping

1 tablespoon coarse sugar (I used demerara)
1 tablespoon granulated sugar
1 1/4 teaspoons cinnamon
pinch fresh grated nutmeg

To prepare the dough

Preheat oven to 350 degrees.

In a medium bowl, whisk together flour, baking powder, cinnamon, salt and nutmeg.

In a large mixing bowl, beat together butter and brown sugar until smooth and creamy. Beat in eggs, one at a time, mixing until well combined after each. Mix in vanilla. Add dry ingredients and stir just until combined - fold in cinnamon chips.

Scoop mixture into a 9" x 13" baking dish coated with cooking spray - spread the stiff dough over the bottom to form an even layer.

To prepare the topping

In a small bowl, stir together coarse sugar, granulated sugar, cinnamon and nutmeg. Scatter mixture evenly over the top of the dough.

Place pan into the oven and bake until the center springs back when lightly pressed, about 25 to 30 minutes. Remove from the oven and set pan on a wire rack to cool completely before cutting.

Makes about 24 bars.

  1. Looks delicious. I love blondies, but I think sometimes people put too many ingredients in them. I love snickerdoodles too.

  2. That's crazy ... "Snickerdoodle Blondies" were something I kept submitting variations of when I first started cooking contests years ago. Never won a cent from them. Guess it goes to show that there's nothing new in this world.
