Giant Ginger Cookies

Giant Ginger Cookies (Adapted from Everyday Food)

2 1/2 cups all-purpose flour
2 1/4 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon ground ginger
1/2 teaspoon ground allspice
1/4 teaspoon fresh ground black pepper
12 tablespoons (1 1/2 sticks or 3/4 cup) unsalted butter, softened
1/2 cup packed brown sugar
1/2 cup granulated sugar, plus additional for rolling
6 tablespoons molasses
1 teaspoon vanilla
1 large egg

In a medium bowl, whisk together flour, baking soda, salt, ginger, allspice and pepper.

In a large mixing bowl, beat together butter, brown sugar and granulated sugar until creamy and smooth. Mix in molasses, vanilla and egg. Add dry ingredients and mix just until combined. Scoop dough out and flatten into a disc - wrap in saran wrap and freeze for 20 minutes.

Meanwhile, preheat the oven to 350 degrees.

Evenly divide dough into 12 pieces and roll each into a 2" ball. Roll balls in 1/3 cup additional granulated sugar and place onto parchment-lined baked sheets at least 4" apart. Flatten cookies into 3" rounds. Sprinkle any remaining sugar from rolling over the cookies.

Place into the oven and bake until the cookies are set and brown, about 12 to 15 minutes. Remove and allow cookies to cool for 3 to 4 minutes on the baking sheets before transferring them to a wire rack to cool completely.

Makes 12 cookies.

  2. I've printed some recipes from your blog to try, but I've never actually made any of them...until now. I made those Giant Ginger Cookies on Sunday and they turned out beautifully. I shared them at a gathering and received many compliments. The recipe was quick, simple and easy to duplicate on my own. Thank you!
