Chewy Caramel Popcorn and Pretzel Bars

Chewy Caramel Popcorn and Pretzel Bars (Adapted from Everyday Food)

12 cups plain popped popcorn
4 cups (about 7 1/2 ounces) coarsely chopped small salted pretzels
3/4 to 1 cup Reese's Pieces candies
2 cups granulated sugar
1/2 cup water
1/2 teaspoon salt, plus additional if desired
2/3 cup heavy cream
2 cups miniature marshmallows

In a large bowl, toss together popcorn, pretzels and candies.

In a medium saucepan, bring sugar, water and salt to a boil over medium-high. Boil, without stirring, until the mixture turns amber in color, about 8 to 12 minutes. Remove pan from heat and gradually pour in cream- the mixture will spurt and sputter, so be careful. Immediately add marshmallows and stir until melted and smooth.

Pour caramel over the popcorn mixture and stir quickly with a heat-safe spatula until well coated. Scoop mixture into a 9" x 13" baking pan - using either lightly greased hands or a piece of plastic wrap, press evenly into the baking pan. If desired, lightly sprinkle the top with additional coarse salt. Set aside and allow to cool completely before cutting into bars.

Makes about 16 bars.

  1. This recipe is just in time for the bake sale I signed up for --- the only danger is these may never make it to the event! Sweet 'n Salty are my downfall!

  2. Those look delicious. I agree with Cindy, perfect for a bake sale, but potentially dangerous, too, because it would be easy to eat them all yourself.

    If they aren't too sticky they might be good to take on a hike or road trip, too.
