Browned Butter Caramel Chews

Browned Butter Caramel Chews (Adapted from Kellogg's)

5 tablespoons unsalted butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla
1/4 teaspoon salt
1 cup flaked coconut
5 cups Corn Flakes

Preheat oven to 350 degrees.

In a small saucepan, melt butter over medium - continue to cook, stirring constantly, until the butter releases a nutty aroma and starts to turn golden, about 5 to 8 minutes. Remove from the heat and set aside to cool slightly.

In a large bowl, stir together warm browned butter, granulated sugar and brown sugar until combined. Stir in egg, vanilla and salt. Add coconut and Corn Flakes, mixing gently to coat.

Using a tablespoon or a cookie scoop, drop mixture in mounds onto parchment-lined baking sheets. Place into the oven and bake until golden brown, about 9 to 12 minuets. Remove from the oven and place pans onto a wire rack - allow the mounds to cool completely on the baking sheet.

Makes about 3 to 4 dozen caramel chews.
