Baked Bow-Tie Pasta with Mozzarella (Adapted from Everyday Food)
8 ounces dry bow-tie (farfalle) pasta
1 teaspoon olive oil
2 garlic cloves, minced
28 ounce can whole peeled tomatoes
1/4 teaspoon crushed red pepper
1/4 teaspoon dried oregano
1/8 teaspoon granulated sugar
salt to taste
2 cooked chicken sausages, cut crosswise into 1/4" thick rounds
8 ounces mozzarella cheese, cut into small cubes
1 ounce fresh grated Parmesan cheese
Preheat oven to 400
In a large pot of boiling salted water, add pasta and cook according to package directions. Drain and set aside.
Meanwhile, in a large saucepan, heat oil over medium. Stir in garlic - cook until fragrant, about 1 minute. Add tomatoes, crushed red pepper, oregano and sugar - bring to a boil, reduce to a simmer and cook, stirring to break up tomatoes, until slightly thickened, about 5 to 8 minutes. Remove from heat and season to taste with salt.
Stir pasta, sausage and half the mozzarella into the sauce. Scoop mixture into a 2 quart baking dish coated with nonstick spray. Scatter remaining mozzarella on top and sprinkle with Parmesan. Place in the oven and bake until bubbly and the top is lightly golden, about 10 to 15 minutes. Let cool slightly before serving.
Makes about 4 servings.

Joe, what kind of chicken sausage did you use in this? I'm picturing like polska kielbasa kind of thing, or do you mean the bratwurst looking sausages like they have in the Whole Foods meat section? (They have a great selection of fresh chicken sausages). The recipe sounds wonderful, I just printed it out and will put it on my menu one day next week.

Hi Deb - I mentioned in the main post that we used the pre-cooked chicken sausages from Costco. They are usually about 3-5 ounces in size and are fully cooked and usually flavored (we used a sun-dried tomato and mozzarella combo one). Does that help?
