Balsamic Baked Potatoes

Balsamic Baked Potatoes (Adapted from Everyday Food)

1 1/2 pounds new potatoes, halved
3/4 cup chicken broth
1/4 cup balsamic vinegar
8 garlic cloves, smashed
5 sprigs of fresh thyme
salt and fresh ground black pepper

Preheat oven to 425 degrees.

Place potatoes, broth, vinegar, garlic and thyme into an 8" baking dish coated with nonstick spray - season with salt and pepper, then toss together to coat. Place into the oven and bake until the potatoes are tender and liquid has reduced to a glaze, about 60 to 75 minutes, tossing mixture twice while baking.

Makes 4 servings.

  2. Joe - potatoes are my favorite food group and these look and sound delicious. But the picture looks like small whole potatoes, not halved. Did you just pose them that way, or did you not halve them?

    Lee Ann - They were halved, but I didn't even notice that it was their uncut sides that were in front!
