Basmati Pilaf with Vermicelli and Onions

Basmati Pilaf with Vermicelli and Onions (Adapted from CL)

1 tablespoon plus 2 teaspoons olive oil
3/4 cup chopped sweet onion
2 cups dry basmati rice
2 ounces dry vermicelli, broken into 2" pieces
3 cups chicken broth
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup chopped fresh parsley
1/4 cup chopped green onions

Preheat oven to 350

In a Dutch oven, heat oil over medium heat. Add onion and cook until softened, about 4-5 minutes. Stir in basmati rice and pasta - cook until rice is opaque, about 2 minutes. Pour in chicken broth, salt and black pepper - bring mixture to a boil. Cover and place in the oven to bake for 15 minutes. Remove and let stand, covered, for 15 minutes. Stir in fresh parsley and green onions to serve.

Makes about 6 servings.
