Beef and Spinach Pizza (Adapted from Canadian Living)
16 ounces ground sirloin
3/4 cup sliced onion
2 garlic cloves, minced
1/2 teaspoon dried basil
1/2 teaspoon cayenne pepper sauce
salt and fresh ground black pepper
4 cups lightly packed shredded spinach
1 1/2 cups marinara sauce
cornmeal, for dusting
16 ounces prepared whole-wheat pizza dough (I used our favorite recipe)
4 ounces (about 1 cup) shredded mozzarella cheese
2 ounces (about 1/2 cup) crumbled goat cheese
In large nonstick skillet over medium-high heat, add beef - cook, stirring to crumble, until browned, about 8 minutes. Stir in onion, garlic, basil, cayenne pepper sauce - season with salt and fresh ground black pepper. Cook until the onion has softened, 5 minutes. Stir in spinach and marinara sauce - cook, stirring, until spinach begins to wilt, about 1 minute. Remove from the heat.
Preheat oven to 450 degrees with a pizza stone placed on the lowest rack.
Sprinkle enough cornmeal to slightly cover a pizza peel. Stretch and roll out dough to a rough 13" circle on a lightly floured surface - transfer to the cornmeal-dusted peel and crimp the edge to form a small rim. Spread beef mixture over the top of the dough. Scatter the mozzarella and goat cheeses on top. Slide pizza onto the baking stone and cook until the crust is golden and the cheese is bubbly, about 10 to 15 minutes.
Remove and let cool slightly before serving.
Makes about 4 to 6 servings.

This one is GOOD! Made it Friday night (with your whole wheat pizza crust, of course!) Subbed ground buffalo for the ground beef, and a smaller quantity of tomato paste + balsamic vinegar for the marinara. It's in the keeper pile. Thanks!
