Black Pepper and Molasses Pulled Chicken Sandwiches

Black Pepper and Molasses Pulled Chicken Sandwiches (Adapted from CL)

3 tablespoons ketchup
1 tablespoon cider vinegar
1 tablespoon grainy Dijon mustard
1 tablespoon molasses
1 teaspoon chili powder
3/4 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ginger
12 ounces boneless, skinless chicken thighs, sliced into 2" pieces
3 or 4 sandwich rolls

In a medium saucepan, whisk together ketchup, vinegar, mustard, molasses, chili powder, cumin, pepper and ginger - stir in chicken. Bring mixture to a boil - cover, reduce heat to a simmer and cook, stirring occasionally, until chicken is cooked through, about 22 to 25 minutes.

Remove from heat and shred chicken pieces. If desired, place back over medium heat for 1 to 2 minutes to heat through. Divide mixture between the four sandwich rolls to serve.

Makes about 3 to 4 servings.
