Broccoli Salad with Creamy Feta Dressing (Adapted from Eating Well)
1/3 cup crumbled feta cheese
1/4 cup plain yogurt
1 tablespoon lemon juice
1 garlic clove, minced
1/4 teaspoon freshly ground pepper
3 cups chopped broccoli florets
7 ounce can chickpeas, rinsed and drained
1/2 cup chopped red bell pepper
In a medium bowl, whisk together feta, yogurt, lemon juice, garlic and pepper until well combined.
Add the chopped broccoli, chickpeas and bell pepper - toss well to coat. Can be chilled or served at room temperature.
Makes about 3 or 4 servings.
