Brown Rice and Edamame (Adapted from Everyday Food)
1 1/2 cups vegetable broth
3/4 cup brown jasmine rice
1 1/4 cups frozen shelled edamame
1 tablespoon fresh lime juice
1 tablespoon rice vinegar
1 1/2 teaspoons toasted sesame oil
1/2 teaspoon sugar
1/4 cup thinly sliced green onions
In a medium saucepan, bring broth to a boil and season with a bit of salt if necessary. Stir in rice, reduce heat to a simmer, cover and cook for 30 minutes.
Stir in edamame - cover and continue to cook until rice is tender, 10 to 15 minutes more.
In a small bowl, whisk together lime juice, vinegar, oil and sugar.
When the rice is done, use a fork to stir the juice mixture and the sliced green onions into the rice - season to taste with salt and pepper.
Makes about 4 servings.
