Cardamom Sour Cream Waffles

Cardamom Sour Cream Waffles (Adapted from Gourmet)

3/4 cup all-purpose flour
3/4 cup whole-wheat pastry flour (can use completely all-purpose, if desired)
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
heaping 1/4 teaspoon salt
1 teaspoon ground cardamom
1 cup milk
1 cup sour cream
1 teaspoon vanilla
1 tablespoon honey
2 large eggs
3 tablespoons unsalted butter, melted

Preheat waffle iron

In a medium bowl, whisk together flours, baking powder, baking soda, salt and cardamom.

In another medium bowl, whisk together milk, sour cream, vanilla, honey, eggs and butter. Pour into the dry ingredients and mix until combined.

Cook according to your waffle machine's directions. The amount of batter and cooking time will vary depending on what kind of waffles you make, American or Belgian - we used roughly 1/3 cup or so for each waffle well in our American-style waffle machine.

Makes about 4 servings.
