Cheesy Broccoli-Potato Mash (Adapted from Eating Well)
1 pound Yukon Gold potatoes, cut into wedges
3/4 pound broccoli crowns, chopped
3 ounces shredded fontina cheese
1/2 cup milk, warmed
1/2 teaspoon salt
fresh ground pepper to taste
In a large pot, add enough water to come up about 1" from the bottom - bring to a boil. Set potatoes in a steamer basket, cover and steam for 10 minutes. Set the broccoli on top of the potatoes - cover and steam until the potatoes and broccoli are tender, about 6 to 8 minutes more.
Scoop out the broccoli and place in a large bowl - coarsely mash with a potato masher. Add the potatoes, cheese, milk, salt and pepper - continue mashing to desired consistency.
Makes about 4 to 6 servings.
