Chocolate Drizzled Cherry Bars (Adapted from Land O Lakes)
For the crust and crumb mixture
1 cup whole wheat pastry flour
1 cup all-purpose flour
2 cups old-fashioned rolled oats
1 1/2 cups granulated sugar
1/2 teaspoon salt
20 tablespoons unsalted butter, softened
For the filling
21 ounce can cherry pie filling
1 teaspoon almond extract
For the drizzle
3 ounces chopped bittersweet chocolate, melted
Preheat oven to 350
To make the base
In a large mixing bowl, beat together flour, oats, sugar, butter and salt on low speed until combined and the mixture is clumpy. Set aside 1 1/2 cups.
Scoop the rest of the mixture into a 9 x 13" baking dish - press the crumbs down to form an even base. Bake until the edges are a very light brown - about 15 minutes.
To make the filling
In the same mixing bowl, stir together the cherries and almond extract. Carefully spread the filling over the hot crust. Evenly scatter the top with the reserved crumb mixture. Place back in the oven and continue to bake until the top is golden brown - about 28-32 minutes. Remove and set on a wire rack to cool.
For the drizzle
Drizzle melted chocolate over the top of the cooled bars and let sit until the chocolate has a chance to set before cutting.

ReplyDeleteI made these yesterday as dessert for our Valentine dinner as well as a gift for our neighbor whose birthday is on Valentines Day. They sounded delish and they were!!! I love them and they are easy to make! Definately a keeper!
