Chocolate Peanut Butter Oatmeal Drops

Chocolate Peanut Butter Oatmeal Drops (Adapted Baking From My Home to Yours)

1 1/2 cups all purpose flour
1/2 cup natural cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
16 tablespoons unsalted butter
1 tablespoon water
1 cup packed brown sugar
1/2 cup granulated sugar
6 ounces chopped bittersweet chocolate
6 tablespoons creamy peanut butter
2 large eggs
1 1/2 cups old-fashioned rolled oats

Preheat oven to 350 degrees.

In a medium bowl, whisk together flour, cocoa, baking soda, cinnamon and salt.

In a medium heat-safe bowl, add butter, water, brown sugar, granulated sugar, chopped chocolate and peanut butter. Set bowl over a saucepan of simmering water. Heat ingredients together, stirring occasionally, until just melted and smooth - you don't want to let the mixture get too hot as it may separate.

Remove bowl from the heat and whisk in eggs, one at a time. Add dry ingredients and stir just until combined. Stir in oats.

Using a tablespoon cookie scoop, drop the dough onto baking sheets lined with parchment paper. Place into the oven and bake until the edges of the cookies are set, but the center is still slightly soft - about 10 to 12 minutes. Remove from the oven and let cool completely.

Makes about 48 cookies.

  2. Cooking time would be helpful (she says, as she just put a pan in the oven and then realized there was no cooking time in the recipe - oops).

  3. Elaine - I used creamy - why not just add some peanuts for the crunch? I doubt it would ruin the recipe, but I can't be sure since I didn't try it.

    Jenipurr - time added... it is roughly 10 to 12 minutes.
