Cornmeal-Maple Biscuits

Cornmeal-Maple Biscuits (Adapted from KAF Whole Grain Baking)

1 cup whole yellow cornmeal
1 cup white whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
5 tablespoons cold unsalted butter, cut into cubes
1/2 cup milk
1/4 cup pure maple syrup

Preheat oven to 400

In a large bowl, whisk together cornmeal, flour, baking powder and salt. Stir in cubed butter. Using a pastry blender, cut in butter until the mixture resembles coarse crumbs.

In a small bowl, whisk together milk and syrup. Pour into the dry ingredients and stir just until combined. Scoop the dough onto a parchment lined baking sheet by heaping tablespoonfuls.

Bake biscuits until the edges turn a light golden - about 15 minutes. Remove and serve while warm.

Makes about 18 small biscuits.
