Cottage Cheese Pancakes (Adapted from Martha Stewart)
3/4 cup all-purpose flour
1 tablespoon sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
3/4 cup cottage cheese
2/3 cup milk
2 large egg whites
1/2 teaspoon vanilla extract
In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt.
In a medium bowl, whisk together cottage cheese, milk, egg whites and vanilla. Pour into the dry ingredients and stir just until combined.
Scoop about 1/4 cup batter per pancake onto a hot nonstick griddle. Turn when tops are covered with bubbles and edges look cooked - after turning, cook just until the center feels firm.
Makes about 4 servings.

I'm not a pancake fan, my kids like pancakes

the pancakes tasted rotten.
