Crustless Turkey and Spinach Quiche

Crustless Turkey and Spinach Quiche (Adapted from CL)

1 teaspoon olive oil
1/2 cup chopped onion
1 cup shredded cooked turkey
fresh ground black pepper
3 ounces (about 3/4 cup) shredded Swiss cheese, divided
2 large eggs
2 large egg whites
1 cup cottage cheese
1/2 cup evaporated milk
1 cup fresh baby spinach leaves
1 ounce (about 1/4 cup) shredded sharp white cheddar cheese
1/2 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt

Preheat oven to 350°.

In a large skillet, heat oil over medium-high. Stir in onion - cook until the onion just begins to soften, about 2 to 3 minutes. Stir in turkey - season with fresh ground black pepper and continue to cook until the turkey is thoroughly heated through and lightly browned, about 3 to 4 minutes. Remove from the heat and set aside.

Scatter 1 ounce (about 1/4 cup) of the Swiss cheese into the bottom of a 9" pie plate coated with cooking spray. Arrange shredded turkey mixture on top.

In a large bowl, whisk together eggs, egg whites, cottage cheese and milk until combined. Stir in spinach and remaining 2 ounces (about 1/2 cup) Swiss cheese and white cheddar cheese.

In a small bowl, whisk together flour, baking powder and salt. Add to the egg mixture and stir until combined. Pour mixture into the pie plate over the turkey mixture. Place into the oven and bake until a knife placed into the center comes out clean, about 40 to 50 minutes. Remove and let cool slightly before serving.

Makes about 4 to 6 servings.
