Dirty Rice

Dirty Rice (Adapted from Eating Well)

3 cups chicken broth
1 1/2 cups Wehani or long-grain brown rice
1 tablespoon peanut oil
10 ounces cooked chicken andouille sausage, cut into 1/2" pieces
1 1/2 cups chopped yellow onion
1 1/4 cups chopped celery
1 cup chopped red bell pepper
2 garlic cloves, minced
2 teaspoons chopped fresh thyme leaves
1/2 teaspoon cayenne pepper
1/4 teaspoon salt

In a large saucepan, add broth and rice - bring to a boil, reduce heat to low, cover and simmer until the water is absorbed, about 40 to 50 minutes. Remove from the heat and let stand, covered, for 10 minutes.

In a large skillet, heat oil over medium. Add sausage - cook until it begins to brown, about 5 minutes. Stir in onion, celery and red bell pepper - cook, stirring, until the onion is soft, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in thyme, cayenne and salt. Stir the sausage mixture into the rice and serve.

Makes about 4 to 6 servings.

  1. Don't feel bad. I am from LA and I won't eat the traditional version either.

    I usually use ground beef or pork instead. That way it pretty much looks the same. :)
