Gnocchi with Broccoli Rabe, Caramelized Garlic, and Parmesan

Gnocchi with Broccoli Rabe, Caramelized Garlic, and Parmesan (Adapted from CL)

12 ounces broccoli rabe, trimmed
16 ounces prepared gnocchi
2 tablespoons olive oil
4 garlic cloves, thinly sliced
1/4 teaspoon salt
1/4 teaspoon crushed red pepper
1 ounce fresh grated Parmesan cheese

In a large pot of boiling salted water, add broccoli rabe and let cook for 4 minutes. Remove broccoli rabe with a slotted spoon and place in a colander to drain.

Drop gnocchi into the boiling water - cook until they float to the surface and are done, about 3 minutes. Reserve about 1/4 cup of the cooking liquid - drain gnocchi in a colander.

In a large skillet, heat oil over medium. Add garlic - cook lightly browned, stirring often, about 3 minutes. Stir in broccoli rabe, gnocchi and reserved cooking liquid - cook 2 minutes. Season with salt and crushed red pepper. Serve with the grated Parmesan on top of each portion.

Makes 4 servings.
