Herbed Brown Basmati Rice (Adapted from CL)
2 teaspoons olive oil
1 cup dry brown basmati rice
1 garlic clove, minced
1 cup vegetable broth
1 cup water
1 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon dried thyme
1/4 cup sliced green onions
1/4 cup pine nuts, toasted
3 tablespoons fresh grated Parmesan cheese
1/2 teaspoon fresh ground black pepper
In a medium saucepan, heat oil over medium-high. Add rice and garlic - sauté until right is lightly toasted, about 2 minutes. Stir in broth, water, basil, salt and thyme - bring to a boil, cover, reduce heat and simmer until the rice is tender and the liquid has been absorbed, about 30 to 40 minutes. Remove from heat and let stand 5 minutes. Stir in onions, nuts, Parmesan cheese and pepper.
Makes about 4 to 6 servings
