Hummus Cakes

Hummus Cakes (Adapted from Veg Times)

2 15 ounce cans chickpeas, drained and rinsed, divided
1/2 cup chopped green onions
1/4 cup tahini
2 tablespoons fresh lemon juice
1 tablespoon olive oil
2 garlic cloves, minced
1 teaspoon lemon zest
1 teaspoon salt

Preheat oven to 350

In a food processor, add 2 1/4 cups chickpeas, green onions, tahini, lemon juice, oil, garlic, lemon zest and salt - process until combined and coarsely chopped. Scoop into a medium bowl and stir in the remaining whole chickpeas.

Evenly divided mixture into 12 patties and place on a baking sheet coated with olive oil spray. Lightly coat the top of the patties with olive oil spray. Place in the oven and bake for 30 minutes. Remove and let sit for a couple minutes before serving.

  1. This sounds really good! As an appetizer, how about a cilantro leaf on each one with a tiny dab of sour cream? Definitely going to try this...
