Iced Oatmeal Applesauce Cookies (Adapted from Martha Stewart)
For the cookies
1 1/2 cups old-fashioned rolled oats
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
4 tablespoons unsalted butter, melted
1 cup packed brown sugar
1/2 cup granulated sugar
1 large egg
1/2 cup applesauce
3/4 cup golden raisins
For the icing
1 3/4 cups confectioners' sugar
3 tablespoons pure maple syrup
1 to 3 tablespoons water
To prepare the cookies
Preheat oven to 350 degrees.
In a medium bowl, whisk together oats, flour, baking soda, cinnamon, baking power and salt.
In a large mixing bowl, beat together butter and sugar until combined. Mix in egg until combined. Beat in applesauce. Add oat mixture, stirring until combined. Stir in raisins.
Drop tablespoons worth of the dough onto parchment-lined baking sheets, about 2" apart. Place into the oven and bake until the cookies are golden and just set, about 12 to 15 minutes. Remove and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
To prepare the icing.
In a small bowl, whisk together confectioners' sugar, syrup and enough water to get the icing to a consistency that will flow well. Drizzle mixture over cookies.
Makes about 30 cookies.
