Jicama-Apple Slaw

Jicama-Apple Slaw (Adapted from Eating Well)

1/3 cup packed chopped fresh cilantro
2 tablespoons chopped fresh mint
2 tablespoons minced jalapeño pepper
1 teaspoon sugar
3/4 teaspoon salt
1/2 teaspoon ground cumin
1/4 cup fresh lime juice
1/3 cup extra-virgin olive oil
1 1-pound jicama, peeled
1 medium Granny Smith apple, cored
2 navel oranges
2 avocados, diced

In a food processor, add 1/3 cup cilantro, 2 tablespoons mint, jalapeño, sugar, salt, cumin and lime juice - process until finely chopped. With the motor running, add oil in a slow, steady stream until the dressing is well combined. Pour out the dressing and add the shredding disk to your food processor.

Cut the jícama and apple into chunks and shred them in the food processor. Add to the bowl with the dressing.

Remove the peel and pith from the orange - working over the bowl with the slaw, cut the orange segments out and let them, along with any juice, drop into the bowl. Squeeze any remaining juice into the slaw. Add avocados and gently toss to combine.
