Make-Ahead Gravy

Make-Ahead Gravy (Adapted from CL)

3 tablespoons all-purpose flour
2 tablespoons butter, softened
5 cups Roasted Turkey Stock, divided
2 teaspoons chopped fresh sage
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

In a medium bowl, mix together flour and butter.

In a large saucepan over high heat, add 2 cups stock and bring to a boil. Reduce until the mixture measures about 1/2 cup. Pour in the remaining 3 cups stock and bring back to a boil.

Whisk in 1 cup of the hot stock to the butter and flour. Pour mixture into saucepan, reduce heat to medium-low and cook until thickened - about 5 minutes. Season with sage, salt and black pepper.

Makes about 3 cups gravy.
