Maple-Cinnamon Granola Bars

Maple-Cinnamon Granola Bars (Adapted from The New Whole Grains)

1 cup old-fashioned rolled oats
1/2 cup crisped brown rice cereal
1/4 cup whole wheat pastry flour
1/4 cup brown sugar
1/4 cup nonfat powdered milk
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup peanut butter
1/2 cup pure maple syrup
2 tablespoons canola oil
1 teaspoon vanilla extract

Preheat over to 350

In a large bowl, stir together oats, cereal, flour, brown sugar, powdered milk, cinnamon and salt.

In a small bowl, whisk together maple syrup, peanut butter, oil and vanilla. Pour into the dry ingredients and mix until completely combined. Scoop the mixture into an 8" square baking pan coated with nonstick spray. Using an off-set spatula or lightly wet hands, pat the mixture evenly into the pan.

Bake until golden, about 20 minutes - using a stiff spatula or bench knife, carefully cut the bars in the baking pan into 8 pieces. Place back into the oven and continue baking for 5 minutes. Remove and set pan on a wire rack to cool completely before cutting the bars apart.

Makes 8 bars.
