Meringue Nests with Macerated Strawberries

For the strawberries

1 1/2 quarts strawberries, hulled and quartered
2 to 3 tablespoons vanilla sugar

For the meringue nests

2 large egg whites
1/8 teaspoon cream of tartar
pinch salt
6 tablespoons granulated sugar
1/2 teaspoon vanilla

Preheat oven to 250 degrees.

To prepare the strawberries

In a medium bowl, add strawberries and sprinkle with sugar, then toss gently to coat. Cover and place into the refrigerator to chill.

In a mixing bowl, add egg whites, cream of tartar and salt. Beat on high until foamy. Gradually beat in sugar, one tablespoon at a time, beating until stiff peaks form. Mix in vanilla.

On a large baking sheet lined with parchment paper, evenly divide meringue into for portions. Using the back of a spoon, shape meringues into nests (about 5" to 6" wide) with sides about 1" high.

Place pan into the oven and bake until the meringues are firm and dry to the touch, about 60 to 75 minutes. Turn oven off and prop open the door - leave meringues inside to cool for 30 minutes. Remove from the oven and transfer meringues to a wire rack to cool completely.

Serve nests with strawberry mixture on top.

Makes 4 servings.
