Mocha Mudslides (Adapted from KAF Cookie Companion)
2 1/4 cups all-purpose flour
1/3 cup natural cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons unsalted butter, softened
8 tablespoons organic shortening (I used the Spectrum Organic brand)
3/4 cup granulated sugar
3/4 cup packed brown sugar
4 teaspoons instant espresso powder
2 large eggs
1 teaspoon vanilla
1 cup cappuccino chips
1 cup bittersweet chocolate chips
Preheat oven to 375
In a medium bowl, whisk together flour, cocoa powder, baking soda and salt.
In a large mixing bowl, cream together butter, shortening, sugars and espresso powder until light and fluffy. Add the eggs, one at a time, beating until well combined after each egg. Mix in the vanilla. Add the dry ingredients and stir just until combined - fold in the cappuccino and chocolate chips.
Using a tablespoon cookie scoop, drop the dough onto parchment lined baking sheets. Bake until the edges of the cookies are firm and the tops have begun to crack - about 8 to 12 minutes. Remove from the oven and let sit on the baking sheet to cool for 2 minutes before transferring them to a wire rack to cool completely.
Makes about 48 cookies.
