Muenster, Turkey and Apple Quesadillas (Adapted from Everyday Food)
1 tablespoon honey
1 tablespoon Dijon mustard
8 flour tortillas
6 ounces shredded Muenster cheese
8 ounces chopped cooked turkey
1 Granny Smith, cored, halved and thinly sliced
about 2 teaspoons canola oil
Preheat oven to 425
Coat 2 baking sheets with cooking spray and place in the oven to warm up while you assemble the quesadillas.
In a small bowl, stir together honey and mustard.
Working with 4 of the tortillas, sprinkle half of the cheese evenly over the top of them. Evenly scatter the chopped turkey on top and drizzle each with the honey mixture. Arrange the sliced apples on top and scatter the remaining cheese on top. Cover each with the remaining 4 tortillas and brush the tops with the canola oil.
Carefully remove the baking sheets from the oven and transfer 2 assembled quesadillas on each. Bake until golden, rotating the sheets halfway through and flattening them with a spatula, about 20 minutes total. Remove and let cool for 5 minutes before serving.
