New Potato Salad (Adapted from CL)
1 1/2 pounds small red potatoes
1/2 cup finely chopped red bell pepper
1/3 cup finely chopped celery
5 tablespoons mayonnaise
1/4 cup minced shallots
1/4 cup chopped green onions
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
In a large saucepan, add potatoes and cover with water. Bring to a boil, reduce heat and simmer until tender, about 15 minutes. Drain and rinse with cold water - drain well. Let cool and then cut potatoes into quarters.
In a large bowl, mix together peppers, celery, mayonnaise, shallots, green onions, vinegar, mustard, salt and pepper until combined. Add potatoes and gently toss to coat.
Makes about 4 to 6 servings.
