Oatmeal Banana Bread Pancakes (Adapted from Rachael Ray)
1 cup all-purpose flour
1 cup old-fashioned rolled oats
1/3 cup brown sugar
1/4 cup chopped toasted walnuts
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup milk
3/4 cup sour cream
2 large eggs
2 ripe bananas, mashed
1 teaspoon vanilla
1/2 cup golden raisins
3 tablespoons unsalted butter, melted
In a large bowl, whisk together flour, oats, brown sugar, walnuts, baking powder, cinnamon, baking soda and salt.
In a medium bowl, whisk together milk, sour cream, eggs, mashed bananas and vanilla. Pour the wet ingredients into the dry and stir just until combined. Stir in the raisins and melted butter.
Heat a griddle over medium heat and lightly coat with nonstick spray. Scoop about 1/3 cup of batter, per pancake, onto the griddle and cook until bubbles form on the top - flip pancakes and continue to cook until golden, about 2 minutes per side. Repeat with remaining batter until it is all used up.
Makes about 12 pancakes.

I'm in SE VA, and we have some 'winter weather' so pancakes look like just what we need. I'm originaly from W PA, and I MISS SNOW...thanks again for the recipe!
